Ah March, we can finally feel the warmth of spring even though is not here yet. It is the month of transition between the cold winter days and the warm and colorful spring. Every season has it’s beauty and menu. We know that you can easily find broccoli any time of the year in every market but did you know that spring time is when broccoli are meant to grow? We gathered some of the spring season fruits and vegetables that grow in between March and May and some cool recipes that you should really try this month. 1. Bacon-Wrapped Avocado Fries

Do you feel the cravings yet? Everybody loves bacon, and why not make the meal healthier with some delicious avocado. You will need: 20 strips of precooked bacon and 1 large avocado, sliced into pieces. Wrap your slices of avocado with some bacon and put it in the preheated oven. Bake for 5-10 minutes.

2. Kale, Lentil, and Roasted Beet Salad

It’s vegan, gluten free and totally healthy. Ingredients: leeks, 1 beet , 1-2 Tbsp olive oil, 1/4 tsp salt and pepper, 1/2 cup green lentils, 1 cup vegetable stock, 4 kale. Prepare the lentils first by boiling them for 20 minutes with the vegetable stock. Prepare a baking sheet and add the leeks and beets and bake for 20 minutes. When all the green goodies are prepared mix in a bowl. Prepare the kale by putting it in a separate bowl and adding some lime juice and olive oil. Make the dressing for this salad by mixing 1/4 cup tahini, 1/2 lemon juice, 2 Tbsp maple syrup, 3-4 Tbs olive oil and pinch of salt and pepper.

3. Nutty Dark Chocolate Brownies

Ingredients: 5 ounces bittersweet chocolate chips, 2 ounces unsweetened chocolate, 1/2 cup unsalted butter, 3 tablespoons unsweetened cocoa powder, 3 large eggs, 1¼ cups light brown sugar, 2 teaspoons vanilla extract, ½ teaspoon coarse sea salt, 1/4 teaspoon baking soda, 1 cup flour and 1 handful pecan halves, walnut halves, and roasted hazelnuts. Start with melting the chocolates and butter on a double boiler and add the cocoa powder. In another bowl whisk eggs, brown sugar and vanilla extract and add the chocolate mixture. Before baking add the salt, baking soda, flour and nuts. Put it in a preheated oven and bake for 30-35 minutes.

4. Cauliflower Carbonara

Want to prepare a good and nutritious dinner? Follow this recipe. You will only need: 12 slices chopped bacon, 1 head cauliflower, 1/2 teaspoon black pepper and spaghetti. Preheat the oven. Fry the chopped bacon and top the cauliflower with the bacon, some oil and salt and pepper. Bake the cauliflower on a baking sheet for 20-25 minutes. Prepare the spaghetti by instructions and top with the cauliflower and some Parmesan.

5. Lettuce Boats With Sweet Potato, Grapefruit and Paprika Mayo

Ingredients: , 1 sweet potato, olive oil, salt, 1 ruby grapefruit, 2 tbsp mayonnaise, 1/4 to 1/2 tsp sweet smoked paprika, 1 tbsp coriander, 2 tbsp pumpkin seeds and last 1 head of baby gem lettuce. 6. Salmon With Fennel, Bell Pepper and Olives

Ingredients: navel orange, 1 large bulb fennel, 1/4 cup fronds reserved, 1 yellow bell pepper, 2 tablespoons olive oil, 4 skinless salmon fillets, salt and pepper, 1/3 cup pitted black olives.
